These were favorites at the 2010 Cookie Swap & Brunch. I hope you enjoy them too!
Southwestern Quiche
- 6 eggs
- 2 Tablespoons all-purpose flour
- 1 Cup cottage cheese
- 8 oz pepper jack cheese, grated
- 4 to 6 oz cheddar cheese, grated
- 1 small can diced green chiles
- 1 jalapeno, chopped (seeds and all)
Mix eggs and flour together (it will be lumpy, don’t be concerned). Mix the cottage cheese, pepper jack cheese, chiles and jalapeno into the egg mixture. Pour into 9-inch pie crust. Bake at 375 degrees for 40-45 minutes.
Spinach Quiche
- 3/4 cups half and half cream
- 8 eggs (mix with half and half)
- 1/4 cup feta cheese, crumbled
- 1 cup Muenster cheese, grated
- 1 bag of fresh baby spinach, chopped and microwaved for 30 seconds or so. Squeeze dry.
- salt and pepper
- 1/4 tsp dried basil
- 1/52 tsp dried oregano
- 1/4 tsp garlic powder
Mix together and pour into prepared pie crust. Bake at 350 degrees for 50 to 60 minutes.
